Broccoli-leek vegetable with spicy yogurt dip: broccoli and leeks are calcium-rich vegetables. Green veggies in a double pack.
Ingredients
- 150 g broccoli
- 70 g leek (1 stalk)
- 100 ml classic vegetable broth
- 40 g yogurt (0.1% fat)
- 1 tsp Ajvar
- Salt
- nutmeg
Instructions

Wash the broccoli, drain in a sieve, clean and cut into small florets.

Peel thick broccoli stems and slice them into rounds.

Cut the leek stalk lengthwise, wash thoroughly and drain.

Slice the leek into about 1 cm wide pieces.

Bring vegetable broth to a boil in a pot. Add the broccoli and steam covered for 3 minutes over low heat. Add the leeks and steam covered for another 3 minutes.

Place yogurt in a small bowl. Stir in Ajvar and salt.

Grate some nutmeg over the vegetables, season with salt, and serve with the yogurt dip.
