Broccoli-Cauliflower Gratin

A perfect after-work recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 4 tbsp raisins
- 1 broccoli head
- 1 cauliflower head
- Salt
- 400 ml heavy cream (at least 30% fat)
- 4 eggs
- 4 tbsp freshly grated Parmesan
- black pepper (freshly ground)
- nutmeg
- butter (for greasing the dishes)
- 70 g raw ham (cut into fine strips, e.g., smoked ham)
Instructions

Preheat the oven to 200°C (400°F) with both top and bottom heating. Soak the raisins in lukewarm water for 20 minutes, then drain.

Wash the broccoli and cauliflower, cut into florets, and blanch each for 5 minutes in boiling salted water. Shock in cold water and drain well.

Whisk together the cream, eggs, Parmesan, salt, pepper, and nutmeg. Butter four portion-sized baking dishes and layer with broccoli, cauliflower, ham strips, and raisins. Pour the cream mixture over the vegetables and bake in the preheated oven for 25-30 minutes until golden brown.
