Breaded Semolina Cutlets

Ingredients
- 1 l milk
- 1 pinch salt
- 0.5 untreated lemon
- 250 g soft wheat semolina
- 30 g sugar
- 3 eggs
- 30 g clarified butter
- 2 Eggs
- 6 tbsp breadcrumbs
- powdered sugar (or cinnamon sugar for dusting)
Instructions

Bring the milk with salt and grated lemon zest to a boil. Sprinkle the semolina into the boiling milk while stirring, then let it thicken over low heat for 5-10 minutes until firm. While this cooks, rinse a work surface and set aside. Once hot, stir in the sugar and eggs into the thickened mixture, spread it onto the wet board to a thickness of about 1 cm, and allow it to cool completely.

Heat clarified butter in a wide pan.

Cut the cooled batter into slices (or squares). Beat the remaining eggs in a bowl; place breadcrumbs in another. Dip each slice first in egg, then in breadcrumbs, and fry in hot fat until golden yellow on both sides. Immediately plate the cutlets after frying and dust with powdered or cinnamon sugar.
