Ingredients

  • 4 cloves garlic
  • 2 egg yolks
  • Salt
  • white pepper
  • 200 ml olive oil
  • 1 tbsp lime juice
  • 1 tsp grated lime zest
  • 1 tbsp chopped cilantro
  • 4 stonefish fillets (or other fish fillets)
  • flour
  • 1 egg
  • breadcrumbs
  • 4 tbsp oil
  • 1 tbsp butter
  • Salt

Instructions

    Peel the garlic and press it into a bowl with a garlic press. Whisk in the egg yolks, salt, and pepper thoroughly. Then add the olive oil gradually using a whisk—first drips, then a thin stream—until the sauce is thick‑creamy. Add lime juice, stir in cilantro, taste the aioli, cover, and refrigerate until serving.

    Pat the fish fillets dry and lightly dust them with flour. Dip them into beaten egg, then coat with breadcrumbs. Press the coating onto the fish. Heat oil in a large pan, add butter, and fry the fillets on both sides until golden brown. Season with salt and serve with the aioli and optional fries.
