Breaded Fish Pieces with Vegetable Rice

Pan fried fish sticks served over a colorful bed of fluffy vegetable rice, peas, and tomatoes, topped with melted cheese. Try this dish and more recipes from Spoonsparrow!

Ingredients

  • 300 g rice
  • 600 ml Vegetable Broth
  • 600 g peas (frozen)
  • 4 tomatoes
  • 12 fish sticks
  • 3 tbsp chopped parsley
  • 100 g grated cheese

Instructions

    Preheat the oven according to the fish stick package instructions and bake them briefly.

    Cook the rice in vegetable broth as directed on the package until tender.

    Thaw the peas.

    Wash, halve, seed, and dice the tomatoes.

  5. 5.

    Combine the cooked rice, peas, and tomatoes; stir in parsley and transfer to a baking dish. Arrange the baked fish sticks on top and sprinkle with grated cheese. Return to the oven for another 8–10 minutes until the cheese melts and the fish is golden.
