Breaded Atlantic Cod with Lime and Purée

Ingredients
- 800 g potatoes
- 200 ml milk
- 2 tbsp crème fraîche
- 4 Atlantic cod fillets (≈140 g each)
- Salt
- pepper (ground)
- 2 tbsp flour
- 2 Eggs
- 80 g breadcrumbs
- clarified butter (for frying)
- 2 limes
- 1 tbsp brown sugar

Wash the potatoes and steam them for about 30 minutes.

Meanwhile, rinse the fish, pat dry, and season with salt and pepper. Dredge in flour, dip in beaten eggs, then coat with breadcrumbs. Fry in hot oil for 2-3 minutes per side until golden brown.

Peel the limes thoroughly and cut the fillets out of them, collecting the juice. Squeeze out the remaining fruit flesh. Caramelize the sugar in a small pot, deglaze with lime juice, then add the fish fillets and remove from heat.

Peel the potatoes, press through a potato ricer, and mix with hot milk and crème fraîche. Season with salt and pepper, then plate with the fish and lime slices.
