Ingredients

  • 200 g Sour Cream
  • 200 g yogurt
  • 50 g mayonnaise
  • 1 tsp medium-hot mustard
  • 100 g pickled cucumbers
  • 2 hard-boiled eggs (peeled)
  • 4 shallots
  • 4 tbsp chives rolls
  • Salt
  • pepper (from the mill)
  • a pinch of sugar
  • 800 g fish fillet (e.g., redfish, pollock, plaice)

  • 2 Eggs
  • 100 g flour
  • 250 g breadcrumbs
  • vegetable oil (for frying)

Instructions

    Whisk together sour cream, yogurt, mayonnaise and mustard. Dice pickled cucumbers and eggs finely. Peel and dice shallots. Mix all with yogurt, stir in chives rolls, season with salt, pepper and sugar. Chill until serving.

    Wash fish fillets, pat dry and cut into pieces. Season with salt and pepper, drizzle lemon juice. Beat eggs in a bowl. Place flour and breadcrumbs on separate plates. Coat fish pieces in flour, dip in beaten eggs, then roll in breadcrumbs, pressing the coating firmly.

    Heat plenty of oil in a pan and fry fish sticks until golden brown while floating. Remove, drain on paper towels, serve hot with remoulade.
