Paella with Seafood

Ingredients
- 300 g mixed seafood (frozen; e.g., shrimp, mussels, squid...)
- 2 large prawns
- 3 tbsp butter
- 1 bell pepper
- 0.5 stalk leek
- 2 Garlic cloves
- 150 g Frozen Peas
- 1 bay leaf
- 1 tsp saffron
- 250 g quick-cooking rice (pre-cooked, dried about 5 min cooking time)
- 100 ml broth
- Salt
- pepper (ground)
- 1 lemon

Let the seafood and peas thaw.

Wash, trim, and chop the pepper and leek. Peel and finely mince the garlic. Heat 2 tbsp butter and sauté garlic, pepper, leek, bay leaf, saffron, and thawed peas briefly. Then add the seafood except for the large prawns, sauté briefly, pour in broth, season with salt and pepper, bring to a boil once. Fill an oven-safe dish with everything and the rice, bake at 180°C for about 5-10 minutes until cooked through.

Meanwhile, sauté the large prawns in a little butter.

Halve the lemon, cut one half into slices, squeeze out juice from the other.

Plate the paella on bowls, place one prawn on top of each serving and drizzle with lemon juice. Sprinkle with salt and pepper before serving.
