Holzapfel-Jelly – A delicious addition to breakfast toast.

Ingredients

  • 3 kg apples (for 1.5 L juice, wood apple)
  • 500 g gelatinizing sugar (3:1)
  • 4 tbsp lemon juice (60 ml)

Instructions

    Clean jars and lids thoroughly: sterilize in a pot of boiling water for about 10 minutes and let them drain on a clean cloth.

    Wash apples, quarter them and remove the core. Juice in a juicer and collect the juice. In a pot, combine the juice with gelatinizing sugar over high heat, stirring until it boils, then simmer for about 4 minutes while fizzing. Stir in lemon juice and remove from heat.

    Perform a gel test. Immediately pour the hot jelly into the pre-warmed jars, seal tightly, and let them sit upside down for about 10 minutes to cool. Then flip them over and allow to cool completely.
