Braised Lamb with Vegetables

Ingredients

  • 1.5 kg lamb chops
  • 3 tbsp oil
  • 1 onion
  • 1 Garlic clove
  • 4 Carrots
  • 600 ml beef broth
  • 500 g small firm potatoes
  • a pinch ground cumin
  • 1 bunch thyme
  • freshly grated nutmeg
  • Salt
  • ground pepper

Instructions

    Wash and pat the lamb dry.

    Peel the onion and cut it into wedges.

  3. 3.

    Peel the carrots and slice them diagonally into thick rounds.

    Peel the potatoes and halve them.

  5. 5.

    Heat oil in a large pot, brown the meat. Add onion, potatoes, crushed garlic and carrots to braise, pour in broth, season with cumin, nutmeg, salt and pepper. Cover and simmer over low heat for about 45 minutes. Then tear off half of the thyme leaves, add them, and adjust seasoning with salt and pepper. Serve the braised lamb with vegetables garnished with remaining thyme sprigs.
