Braised Chicken Thighs in Tomato Sauce

Ingredients

  • 4 chicken thighs
  • 1 grated lemon (zest and juice)
  • 2 red chili peppers
  • 2 Garlic cloves
  • 1 tsp finely chopped rosemary needles
  • 3 tbsp olive oil
  • Salt
  • 600 g tomatoes
  • 125 ml dry white wine
  • 50 g black olives

Instructions

    Clean the chilies, cut them lengthwise, remove seeds, and finely chop. Peel the garlic and press it through a press.

    Mix lemon zest, 1 tbsp lemon juice, chilies, garlic, rosemary, and oil; season with salt and rub this mixture onto the chicken thighs.

    Boil tomatoes in water, peel them, and dice into small cubes.

    Brown the chicken thighs in hot oil on all sides over high heat. Add tomatoes and wine, stir in olives, season with salt, cover and simmer for about 30 minutes. Serve with rice if desired.
