Savoury pork roast with pineapple from Spoonsparrow ✌︎ Juicy roasting experience with an exotic twist

Ingredients

  • 4 tbsp Honey
  • 2 tsp mustard
  • 1 kg lean Kassler (pork belly)
  • 2 tbsp butter (in pats)
  • 1 pineapple
  • 125 ml whipping cream
  • 1 tsp starch

Instructions

    Whisk together honey and mustard, brush the mixture over the pork. Place the meat in a roasting pan and distribute the butter pats on top. Cover with the lid and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 60 minutes.

    Meanwhile peel the pineapple, cut it lengthwise into quarters, remove the core and slice into 1 cm thick rounds. After 20 minutes of cooking, spread the pineapple pieces around the meat and continue baking uncovered.

    When finished, remove pork and pineapple from the pan. Pour the roasting liquid over with cream. Whisk starch with 1 tbsp water until smooth, add to the sauce, stir and bring to a boil once. Slice the pork, serve with pineapple slices and sauce.
