Ingredients
- 800 g beef fillet trimmed (center cut)
- Salt
- black pepper (ground)
- 2 tbsp Vegetable oil
- 40 g chopped almonds
- 80 g mixed herbs (e.g., chives, parsley and coriander leaves)

Preheat the oven to 120°C with fan and top heat.

Pat the fillet dry and season with salt and pepper. Brown all sides in hot oil, then remove from pan. Place on a rack over a fat pan in the oven; cook about 40-50 minutes depending on thickness (internal temperature pink: 55-60°C).

Roast the almonds in a dry pan until golden brown. Remove and let cool. Wash the herbs, pat dry, pluck stems, finely chop or cut chives into rings. Mix with almonds and spread on a plate.

Take the meat from the oven and roll it in the herb mixture.
