Braised Artichokes
Braised artichokes in citrus basil broth from Spoonsparrow: a delicious starter with wellness benefits thanks to cynarin.
Ingredients
- 2 organic oranges
- 2 Organic lemons
- 2 red onions
- 8 small artichokes (for braising)
- 2 tbsp olive oil
- 2 basil stems
- 250 ml vegetable broth
- Salt
- 6 black peppercorns
Instructions

Rinse one orange hot, dry rub and thinly peel the zest with a paring knife. Squeeze both oranges.

Squeeze lemons, pour juice and about 2 l water into a large bowl. Peel onions and cut into fine strips.

Clean artichokes by removing hard outer leaves and scraping stems generously with a paring knife.

Quarter artichokes, remove the choke from the flower base, and immediately place them in lemon water to prevent browning.

Heat oil in a pot, sauté onions until translucent. Rinse basil, shake dry and add it to the pot.

Add orange zest and juice with vegetable broth to the pot, sprinkle some salt and peppercorns.

Drain artichokes and add them to the pot. Bring everything to a boil over medium heat, then simmer covered on low heat for about 15 minutes.

Lift braised artichokes from the broth with a slotted spoon and serve hot or cold.
