Boiled Potatoes with Quark

Try the classic boiled potatoes with quark and linseed oil from Spoonsparrow. A light lunch not just for vegans.

Ingredients

  • 1 kg waxy potatoes
  • 1 tbsp caraway seeds
  • 500 g Low-fat quark
  • 125 ml Milk (1.5% fat)
  • Salt
  • 0.5 bunch Chives
  • 4 tbsp linseed oil

Instructions

    Wash potatoes thoroughly. Place potatoes and caraway in a pot, cover almost with water, bring to a boil covered; simmer on medium heat for 20–25 minutes.

    Meanwhile whisk quark and milk together, season with salt.

    Wash chives, shake dry and cut into thin ribbons.

  4. 4.

    Drain potatoes in a colander, rinse with cold water, then peel.

  5. 5.

    Serve boiled potatoes with quark. Sprinkle chive ribbons over the quark and drizzle linseed oil on top.
