Bohemian Plum Dumplings

Ingredients
- 400 g waxy potatoes
- 100 g flour
- 25 g semolina
- 170 g soft butter
- 1 egg yolk
- 50 g sugar
- Salt
- 10-12 plums
- 10-12 pieces cube sugar
- 100 g breadcrumbs
- 2-3 tbsp powdered sugar

Wash the potatoes and boil them in their skins with water for 25–30 minutes. Drain, let them steam slightly, peel while hot, and press through a potato masher. Let the mash cool.

Work flour, semolina, 1 tablespoon butter, egg yolk, sugar, and ½ teaspoon salt into the potato mash and let the dough rest for 15 minutes. Meanwhile wash the plums, slice lengthwise, split them open but keep the halves together, remove pits, and insert a cube of sugar in each opening. Bring plenty of water with 1 teaspoon salt to a boil in a large pot.

On a floured work surface roll the dough into a roughly 5 cm thick log. Cut into 10–12 slices and flatten slightly. Place one plum on each slice, fold over the edges, and shape into dumplings. Cook in boiling water for 15–20 minutes (test doneness).

Heat the remaining butter in a large pan and brown the breadcrumbs over medium heat. Lift the finished dumplings from the cooking liquid with a slotted spoon and drain well. Toss them in the breadcrumb butter, plate, dust with powdered sugar, and serve hot.
