Almond Tartlets French Style
These almond tartlets cannot be called healthy, but they are food for the soul and bring happiness.
Ingredients
- 125 g butter
- 150 g cane sugar
- a pinch of salt
- 250 g flour (type 405)
- 4 eggs
- 75 g ground almond kernels
- 4 tbsp apricot jam
Instructions

Whisk 75 g butter and 100 g sugar with a pinch of salt until smooth but not frothy.

Fold in the two eggs.

Add all the flour at once and knead into a smooth dough. Wrap tightly in cling film and chill for 2 hours.

Roll out the dough on a floured surface to a thickness of 3‑4 mm. Cut out eight 10 cm circles. Line lightly greased 8 cm tart pans with them, pressing the edges firmly. Chill again for 30 minutes.

Trim any excess dough from the rims if necessary.

Melt the remaining butter in a bowl. Add the rest of the sugar, eggs and ground almonds with a pinch of salt; whisk until smooth.

Evenly pour the filling into the tart shells. Bake in a preheated oven at 180 °C (165 °C fan) for about 25 minutes on the lowest rack.

Remove the baked tartlets from the oven, let them cool slightly, then release them from the pans.

Melt apricot jam in a small saucepan and brush it over the tops of the tartlets. Garnish with fresh fruit or berries before serving.
