Apricot Galette

The apricot galette by Spoonsparrow is a simple summer cake made with few ingredients and tastes great!

Ingredients

  • 200 g Spelt flour Type 1050
  • 75 g ground almonds
  • 1 pinch salt
  • 60 g whole grain sugar
  • 1 egg
  • 80 g Butter
  • 450 g apricots
  • 1 tbsp Lemon Juice
  • 0.5 Vanilla pod

Instructions

    Knead the flour with 50 g of ground almonds, salt, sugar, egg and softened butter by hand into a smooth dough. Shape the dough into a ball, wrap it in cling film and refrigerate for about 30 minutes.

    Wash the apricots, pat them dry, halve them and remove the pits. Split the vanilla pod lengthwise and scrape out the seeds with a knife. Mix the apricots with the vanilla seeds and lemon juice.

    Roll out the dough on a floured work surface and line a tart pan with it. The edges should hang 2–3 cm over the pan.

    Sprinkle the remaining ground almonds over the base and place the apricots on top. Dot the remaining butter in small flakes and fold the edges slightly over the filling. Bake the apricot galette in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 35 minutes.

    Remove the apricot galette from the oven. Optionally dust it with some whole grain sugar and serve warm, optionally with a splash of whipped cream.
