Ingredients

  • 500 g Blueberries
  • 1 Organic lemon
  • 60 g spelt whole‑grain flour
  • 60 g hearty rolled oats
  • 50 g Coconut sugar
  • 1 tsp vanilla powder
  • 80 g Butter

Instructions

    Rinse berries, wash and pat dry. Rinse the lemon under hot water, pat dry and finely grate some zest. Halve the lemon and squeeze 2 tbsp of juice. Mix berries with lemon zest and juice, then spread in a heat‑proof ceramic dish.

    Combine flour, oats, coconut sugar, and vanilla powder. Melt butter in a small pot over low heat. Add the dry mixture to the butter and work into crumbs. Sprinkle over the berries.

    Bake in a preheated oven at 200 °C (180 °C fan) for about 20 minutes.

    Let cool slightly and serve warm.
