Ingredients

  • 150 g dark chocolate (70% cocoa)
  • 80 g Butter
  • 4 eggs
  • 50 g raw cane sugar
  • 0.5 tsp vanilla powder
  • 0.5 tsp Salt
  • 50 g spelt flour (Type 1050)
  • 1 tbsp powdered sugar made from raw cane sugar (for dusting)

Instructions

    Coarsely chop the chocolate. Melt the chocolate with butter over a hot water bath, stirring occasionally, then remove from heat.

    Whisk the eggs and sugar until frothy. Stir in vanilla powder and salt. Gradually fold in the melted chocolate mixture. Sift in the flour and quickly fold into the batter. Spoon the batter into muffin tins and bake in a preheated oven at 220 °C (200 °C fan; gas: level 3–4) for 10 minutes.

    Let the liquid chocolate muffins cool briefly, release them from the tins, and dust with powdered sugar before serving.
