Tomato-Strawberry Popsicle

Ingredients

  • 1 lemon
  • 120 g raw cane sugar
  • 500 g strawberries
  • 200 g Cherry tomatoes
  • 4 tbsp Maple syrup

Instructions

    Squeeze the lemon. In a pot, bring 350 ml water and lemon juice to a boil with the sugar. Let it simmer until the sugar dissolves, then allow it to cool.

    Meanwhile, wash, trim, and finely puree the strawberries and tomatoes. Pass the mixture through a fine sieve.

    Combine the strawberry-tomato mix with the cooled sugar syrup and maple syrup, then pour into 8 popsicle molds. Freeze for at least 4 hours.
