Blue Potato Mash

Ingredients

  • 800 g violet-blue potatoes
  • Salt
  • 200 ml whole milk
  • nutmeg
  • 2 tbsp butter (30 g)
  • Pepper

Instructions

    Peel the potatoes, cut them into large pieces and cook covered in a little salted water for about 25 minutes.

    Bring the milk to a boil, season with salt and a pinch of freshly grated nutmeg. Add two-thirds of the butter and let it melt in the milk.

    Drain the potatoes, let them steam off briefly, press them while warm through a potato masher and stir in the milk mixture. Season the mash. Add the remaining butter on top of the hot mash and grind pepper over it.
