Blue Cheese Quiche

- 180 g flour
- 1 pinch salt
- 1 egg
- 120 g butter
- 120 g Roquefort
- 3 eggs
- 100 g crème fraîche
- flour (for the work surface)
- butter (for the pan)

For the crust mix flour with salt, sift onto the work surface, create a well in the center, crack an egg into it and scatter butter pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball and wrap in cling film; refrigerate for 30 minutes.

Preheat the oven to 200 °C (convection).

Cut the cheese finely and blend with the eggs and crème fraîche in a blender until smooth.

Roll out the dough on a floured surface slightly larger than the pan, line a greased quiche tin. Raise a rim and spread the Roquefort mixture over it. Bake in the preheated oven for about 30 minutes.

Remove the finished quiche from the oven, let it cool to lukewarm, cut into pieces and serve.
