Ingredients

  • 200 g sugar
  • 250 g blackberries
  • 2 EL lemon juice
  • 300 ml sparkling wine

Instructions

    Simmer sugar with 200 ml water for about 15 minutes, then let cool. Blend blackberries with lemon juice, strain through a fine sieve and mix with sparkling wine and sugar syrup; pour everything into a shallow metal bowl.

    Freeze for at least 4 hours, stirring frequently with a fork to prevent large crystals from forming (or finish in an ice cream maker).
