Ingredients
- 150 g Whole wheat flour
- 1 tbsp oil
- 2 egg yolks
- 375 ml milk (1.5% fat)
- a little water
- 1 pinch salt
- 2 egg whites
- oil for frying
- 400 g blackberries
- 125 ml coffee cream
- 50 g powdered sugar
Instructions

First, mix the flour with milk, egg yolks, a little water and 1 pinch of salt into a thin batter. Let it rest briefly, then check consistency and add more water if needed.

Next, beat the egg whites to stiff peaks, fold them in, and fry about twelve very thin pancakes; keep warm. Rinse, wash and drain the blackberries. Whip the coffee cream until firm, add powdered sugar and whip again until thick.

Finally, stir the blackberries into the whipped cream, spoon 2–3 tbsp onto each pancake and gently mix together.
