Black Turnip Walnut Gratin

Ingredients

  • 1 untreated lemon (juice and zest)
  • 1.2 kg black turnips
  • Salt
  • 60 g sun-dried tomatoes (in oil)
  • 60 g hazelnut kernels
  • black pepper (freshly ground)
  • nutmeg
  • a pinch of cayenne pepper
  • a pinch of sweet paprika
  • 1 tsp Oregano
  • 220 ml soy cream

Instructions

    In a large pot, mix water with lemon juice. Brush the black turnips under running water, peel them and place in the lemon water to prevent discoloration. Then cut into pieces about 12 cm long, splitting very thick roots lengthwise.

    In another pot, bring about 500 ml salted water to a boil and simmer the black turnips for 10-15 minutes.

    Preheat the oven to 180°C (356°F) with both top and bottom heat.

    Drain the tomatoes and spoon a little of their oil into four small baking dishes (or one large dish). Chop the tomatoes and nuts finely together.

    Whisk the soy cream with salt, pepper, nutmeg, cayenne pepper, paprika, oregano and about ½ tsp lemon zest.

    Drain the black turnips, let them cool briefly, then arrange them in the dishes. Pour the cream over them and spread the tomato-nut mixture on top. Bake for about 20 minutes until golden. Garnish with fresh oregano if desired before serving.
