Black Turnips in Cream

Ingredients

  • 1 untreated lemon (juice)
  • 800 g black turnip
  • Salt
  • 1 tsp sugar
  • 3 tbsp butter
  • 2 tbsp flour
  • 300 ml heavy cream (at least 30% fat content)
  • black pepper (ground)
  • nutmeg
  • 2 sprigs parsley

Instructions

    Pour the lemon juice with about 400 ml water into a bowl. Peel the black turnips and cut them into pieces about 8 cm long. Immediately place each piece in the lemon water. Then cook in boiling salted water with sugar for about 10 minutes. Remove with a slotted spoon, drain well, and set aside.

    In another pot heat the butter, sprinkle with flour, sauté briefly, then deglaze with cream and 300 ml of the turnip broth. Whisk vigorously to avoid lumps. Simmer over medium heat for about 10 minutes and season with salt, pepper, and nutmeg.

    Wash the parsley, shake dry, pluck the leaves, and finely chop. Add the turnip pieces to the sauce, warm through, and serve sprinkled with parsley.
