Veggie Pickles

Spoonsparrow and Yakult present: Veggie Pickles – pickled radishes and daikon.

Ingredients

  • 1 bunch radishes
  • 1 daikon (about 500 g)
  • 400 ml white wine vinegar
  • 3 tbsp sugar
  • 0.5 tsp caraway seeds
  • 1 tsp mustard seeds
  • 1 bay leaf
  • 0.5 tsp Peppercorns
  • 0.5 tsp Salt
  • 400 ml water

Instructions

    Clean, wash and slice the radishes into about 2 mm thick rounds. Peel, wash and either slice or julienne the daikon. Mix both together and layer in canning jars up to the rim.

    Heat the vinegar with sugar, spices and 400 ml water in a pot until the sugar has fully dissolved. Pour the hot brine over the radish-daikon mixture. Cover the pickles completely with the liquid and seal as airtight as possible. Let stand for at least 1 hour, preferably overnight.
