Black Tea in Frisian Style

Ingredients

  • 2 tbsp Ostfriesischer Schwarztee (blend of Assam, Ceylon, Darjeeling)
  • 200 ml heavy cream (at least 30% fat)
  • Candi sugar (to taste)

Instructions

    Bring 1 liter water to a boil (soft water preferred). Place the tea loosely in a tea strainer, put it in a porcelain or glass pot and pour the boiling water over it.

    Let steep for about 2-3 minutes, depending on taste. Shorter steeping is more refreshing; longer steeping makes the tea bitter.

    Remove the strainer, add candi sugar to the cups, pour the tea over it, and top with a splash of cream. Do not stir and enjoy hot.
