Black Bean Stew in Brazilian Style

- 2 onions
- 3 cloves garlic
- 1 tbsp Sunflower oil
- 300 g black beans
- 600 ml Vegetable Broth
- 8 peppercorns
- 4 cloves of nutmeg
- 1 bay leaf
- 2 oranges
- 200 g smoked sausage (e.g., chorizo, Kassler)
- 200 g smoked meat (e.g., chorizo, Kassler)
- Salt
- ground pepper
- a splash white wine vinegar
- 250 g spinach leaves
- 1 tbsp butter

Soak the beans overnight in water. Peel and finely chop the onions and garlic. Heat the oil in a pot and sauté the onions with the garlic until translucent. Add the drained beans and pour in 600 ml vegetable broth. Place peppercorns and nutmeg in a spice sachet and add it along with the bay leaf. Cook covered for 1 to 1¼ hours. Using a sharp knife, cut around the oranges to remove the peel. Slice the fruit into rounds. Cut the smoked sausage into bite‑size pieces.

Rinse, wash, and shake dry the spinach. Before serving season the beans with salt, pepper, and white wine vinegar. Melt butter in a pan, add the spinach, sauté briefly until wilted, then season with salt and pepper. Serve the bean stew in bowls topped with spinach and orange slices, accompanied by the sausage.
