Ingredients

  • 200 g dried white beans
  • 400 g waxy potatoes
  • 2 carrots
  • 1 onion
  • 1 Garlic clove
  • Salt
  • Pepper
  • 1 red bell pepper
  • 200 g sausage (e.g., Salsiccia)

Instructions

    Soak the beans overnight. Drain them the next day and cover with water, bring to a boil, then simmer for about 1 hour until tender. Peel and cube the potatoes, carrots, onion, and garlic. After about 30 minutes of bean cooking, add the vegetables together to the pot. Season with salt and pepper.

    Wash, trim, and finely chop the bell pepper. Add it to the soup during the last approximately 15 minutes of cooking. Then mash the mixture roughly with a potato masher. Slice the sausage into rounds and add them along with thyme to the vegetable soup. Let it heat through, taste, and serve.
