Green Grain Soup
This green grain soup from Spoonsparrow is packed with wholesome ingredients and warms you from the inside out.
Ingredients
- 1 onion
- 1 Garlic clove
- 1 piece turmeric root (3 g)
- 2 carrots
- 0.5 stalk leek
- 200 g celery root
- 2 tbsp olive oil
- 150 g green grain groats
- 1 l vegetable broth
- 1 bunch parsley (20 g)
- Salt
- Pepper
- nutmeg
Instructions

Peel and finely dice the onion, garlic, and turmeric. Clean, wash or peel the carrots, leek, and celery root. Slice the carrots lengthwise into about 0.5 cm thick rounds. Cut the leek into thin rings. Dice the celery root into small cubes.

Heat the oil in a pan and sauté the onion, garlic, and turmeric over high heat for 2 minutes. Add the remaining vegetables and cook for another 3 minutes. Stir in the green grain groats. Pour in the vegetable broth, bring to a boil once, then cover and simmer on low heat for about 20 minutes.

Meanwhile wash the parsley, shake it dry, and finely chop it. Season the soup with salt, pepper, and freshly grated nutmeg. Serve on plates sprinkled with parsley.
