Berry Yogurt Cream
The berry yogurt cream from Spoonsparrow is irresistibly creamy and wonderfully fruity at the same time!
Ingredients
- 2.5 sheets white gelatin
- 250 g yogurt (3.5% fat)
- 30 g granulated sugar
- 1 Lime
- 2 stems Mint
- 125 ml heavy cream
- 200 g mixed berries (e.g., strawberries, raspberries, blueberries, bilberries)

Soak gelatin sheets in cold water. Whisk yogurt with sugar. Cut the lime in half and squeeze out the juice. Wash mint leaves and shake dry; pluck off small leaflets.

Remove gelatin sheets from water, squeeze out excess liquid, and warm them with 2 tbsp lime juice in a small saucepan over low heat until dissolved. Remove from heat, stir in 1 tbsp of the yogurt cream, then fold the yogurt-gelatin mixture into the remaining yogurt.

Whip cream to stiff peaks and fold into the yogurt cream. Spoon half of the mousse into glasses and chill briefly.

Meanwhile, rinse berries, wash, pat dry gently, and cut in halves if large. Distribute half of the berries over the yogurt glass layers. Add the remaining cream on top and garnish with the leftover berries. Chill for at least 30 minutes before serving. Garnish with mint leaflets when ready to serve.
