Berry Quark Ice

The berry quark ice from Spoonsparrow requires only a few ingredients and tastes great for all ages!

Ingredients

  • 300 g mixed berries (e.g., currants, raspberries, strawberries)
  • 0.5 lemon
  • 500 g low‑fat quark
  • 50 g powdered sugar (from raw cane sugar)
  • 200 g whipping cream

Instructions

    Rinse and wash the berries, then drain them. Squeeze half a lemon. Blend lemon juice and berries into a puree and strain through a fine sieve.

    Stir the quark with powdered sugar. Whip the cream until stiff peaks form, then fold the berry puree into the quark mixture.

    Fill small ice molds with the mixture. Freeze in the freezer for about 2 hours. Insert wooden sticks and continue freezing for an additional 3 hours.
