Ingredients

  • 200 g blackberries
  • 200 g strawberries
  • 5 eggs
  • 100 g powdered sugar
  • 1 pinch salt
  • 200 ml whipping cream

Instructions

    Wash, clean, and puree the berries.

    Separate the eggs; whisk the yolks with the sugar a bit, then place in a metal bowl.

    Place the bowl over a hot water bath.

  4. 4.

    Whisk over the hot, non‑boiling water bath for 7-10 minutes until thick and creamy.

    Remove the bowl from the water bath and set it on an ice water bath.

    Whip over the ice water bath until cold.

    Beat the egg whites with salt into stiff peaks. Whip the cream to stiff peaks.

    Stir the fruit puree into the yolk mixture.

    Fold in the meringue and whipped cream.

    Fill the mixture into small cups and freeze for at least 4 hours.

    To serve, take from the freezer and briefly dip the molds in hot water. Pour onto plates and serve.
