Berry Mousse

Ingredients

  • 350 g Raspberries
  • 150 g blackberries
  • 125 g sugar
  • 6 sheets white gelatin
  • 6 tbsp raspberry juice
  • 20 ml blackberry liqueur
  • 300 g whipping cream
  • mint (for garnish)

    Wash, clean and pat dry the raspberries and blackberries. Soak the gelatin in cold water. Blend 200 g raspberries and 50 g blackberries with the sugar, then strain through a sieve. Squeeze out excess water from the gelatin, warm it gently in a small pot with 4 tbsp raspberry juice until dissolved. Stir in the blackberry liqueur into half of the puree. Whip the cream stiffly and fold into the mixture. Mix the remaining fruit puree with 2 tbsp raspberry juice.

    Fill the mousse into individual serving molds and refrigerate for at least 4 hours. Before serving, transfer to small plates, drizzle with additional fruit puree, and garnish with leftover raspberries and blackberries. Serve decorated with mint leaves.
