Berry and Pear Sorbet

Ingredients
- 200 g strawberries
- 200 g Raspberries
- 100 g blueberries
- 100 g Blackberries
- 2 tbsp sugar
- 2 tbsp Grand Marnier (optional)
- 150 g sugar

- 200 ml sparkling wine
- 125 g sugar
- 125 ml pear juice
- 600 g aromatic pears
- juice of one lemon
- 40 ml pear brandy
- 1 Egg white

Wash and clean berries, cut strawberries into small pieces. Mix with sugar and optionally Grand Marnier. Let sit briefly, then fill bowls.

Boil sugar with 200 ml water for about 15 minutes, then cool. Wash and rinse berries. Cut strawberries. Puree all berries with lemon juice, strain through a fine sieve, then stir in sparkling wine and sugar syrup. Pour into a shallow metal bowl. Freeze at least 4 hours, stirring frequently with a fork to prevent large crystals (or finish in an ice cream maker).

Boil sugar and pear juice, peel pears, halve, core, cut small, cook in the sugar solution until soft, then strain through a sieve, season with lemon juice and pear brandy. Cool.

Beat egg whites to half‑foam and let rest.

Pour sorbet mixture into a shallow metal bowl and freeze in the freezer while stirring occasionally (or finish in an ice cream maker).

Before serving, let sorbet soften slightly and shape with a warm spoon into small mounds. Serve over mixed berries.
