Wild Garlic Strudel with Ham

Ingredients

  • 1 untreated lemon
  • 1 handful wild garlic (ca. 40 g)
  • 250 g cream cheese
  • 2 tbsp heavy cream
  • Salt
  • Pepper
  • 1 sheet puff pastry (from the fridge, ca. 300 g)
  • 170 g cooked ham
  • 2 egg yolks

Instructions

    Wash the lemon hot, dry it, grate the zest and squeeze out the juice. Rinse the wild garlic and pat it dry.

    Preheat the oven to 180°C with upper and lower heat.

    Whisk the cream cheese with the heavy cream, lemon juice and zest until smooth. Season with salt and pepper. Roll out the puff pastry on a floured cloth and lay the ham on top, leaving about 3 cm at the edges. Spread the cream cheese mixture over the ham and place the wild garlic leaves on it. Fold the strudel in from both sides and roll it up using the cloth.

    Place the rolled strudel on a baking sheet lined with parchment paper. Beat the egg yolks and brush them over the strudel.

    Bake in the oven for about 30 minutes until golden brown.
