Ingredients

  • 250 g soft butter
  • 150 g brown sugar
  • 100 g sugar
  • 2 Eggs
  • 200 g Flour
  • 1 tsp Baking powder
  • 1 pinch salt
  • 1 overripe banana
  • 220 g soft oats
  • 2 tbsp coconut flakes
  • 100 g chopped nuts (e.g., almonds or peanuts)
  • 50 g Raisins

Instructions

    Preheat the oven to 180°C fan-forced. Line a baking tray with parchment paper.

    Cream the butter with both sugars until light and fluffy. Gradually beat in the eggs. Stir in flour, baking powder, and salt. Peel the banana, mash it finely with a fork, then fold into the batter along with oats, coconut flakes, nuts, and raisins to form a smooth dough. Drop spoonfuls onto the tray, leaving space between them, and bake for 12-15 minutes until golden brown.
