Ingredients

  • 1 kg cooked potatoes (from the previous day)
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp clarified butter
  • 2 tbsp milk

Instructions

    Peel and grate the potatoes, season with salt and pepper. Heat the clarified butter in a non‑stick pan, add the potatoes, and shape into a cake using a spatula. Drizzle with milk, cover, and cook over very low heat for about 25 minutes until crisp.

    Carefully flip the rösti using a lid or plate, then cook briefly on the other side over slightly higher heat to crisp it further. Serve hot.
