Bell Peppers with Garlic

Ingredients

  • 6 bell peppers (yellow, red and green)
  • 3 Garlic cloves
  • 2 lemons (juice)
  • Salt
  • pepper (ground)
  • 100 ml olive oil

Instructions

    Preheat the oven to grill mode.

    Wash the bell peppers, halve them, remove seeds, stems and white membranes, and place them skin‑side up on a parchment‑lined baking sheet. Roast in the oven for about 15 minutes until the skins blister and begin to char. Remove from the oven, cover with a damp kitchen towel, let cool, then peel off the skins.

    Cut the roasted pepper halves into wide strips and arrange them in a shallow dish.

    Peel the garlic cloves, slice them thinly, and sprinkle evenly over the peppers.

    Whisk lemon juice with salt, pepper and olive oil to make a dressing; pour it over the peppers. Cover and refrigerate for at least 2 hours before serving.
