Grilled Bell Peppers

Ingredients

  • 1 kg bell peppers (red, yellow, orange)
  • 4 tbsp olive oil
  • 4 tbsp white wine vinegar
  • 2 Garlic cloves
  • Salt
  • Pepper (freshly ground)
  • sugar
  • fresh thyme (for garnish)

Instructions

    Wash the bell peppers, halve them and remove seeds and white membranes. Place skin side down on a hot grill. Grill for about 15 minutes until the skin turns black and blisters. Remove and cover with a damp cloth to cool.

    Whisk together oil and vinegar. Peel garlic, roughly chop, add to mixture and season with salt, pepper, and sugar.

    Peel off the skin of the peppers with a small knife and cut into strips. Toss with the vinegar‑oil dressing and serve on a platter garnished with thyme.
