Belgian Praline Muffins

Ingredients
- 280 g flour
- 2 tbsp cocoa powder
- 2.5 tsp baking powder
- 0.5 tsp Baking soda
- 1 egg
- 120 g sugar
- 80 ml plant oil
- 300 g buttermilk
- 12 Belgian pralines (seafood pralines)
- 100 g milk couverture chocolate
- 100 g white couverture chocolate
- 12 paper muffin cups

Preheat the oven to 180°C. Fill the depressions with paper cups. Carefully mix flour, cocoa powder, baking powder and baking soda.

Lightly whisk the egg in a bowl. Add sugar, oil and buttermilk and stir everything together. Fold the dry mixture into the wet batter until the dry ingredients are just moist.

Pour half of the batter into the pan depressions. Place one praline on each portion of batter and cover with the remaining batter. Bake for 20–25 minutes in the oven. Let the muffins rest on the tray for 5 minutes, then remove from cups and cool on a wire rack. Melt the couverture chocolates separately in a double boiler. Brush the muffins with dark chocolate, drizzle white chocolate over them and stir in a marble pattern with a stick.
