Beetroot and Horseradish

Ingredients
- 600 g beetroot
- 0.5 stick cinnamon
- 0.5 tsp Fennel seeds
- 0.5 stick licorice root
- Salt
- 1 tbsp freshly grated horseradish
- 1 tbsp Lemon Juice
- 3 tbsp olive oil
- black pepper (freshly ground)
- 1 untreated lemon, cut into wedges

Wash the beetroot, place it in a small pot and cover almost with water. Add the cinnamon stick with fennel seeds, licorice root and ½ tsp salt. Bring everything to a boil. Cook over medium heat for 45-60 minutes.

Cool the beetroot under cold running water and peel it. Grate the beetroots finely and mix with horseradish, lemon juice and oil. Season with salt and pepper, taste, then fill small bowls. Serve garnished with a lemon wedge.
