Asparagus Salad with Honey Vinaigrette

Salad as a sweet temptation: The asparagus salad with honey vinaigrette from Spoonsparrow combines tender asparagus with juicy fruits.

Ingredients

  • 600 g white asparagus
  • 300 g Strawberries
  • 1 orange
  • 2 tbsp liquid honey
  • 1 piece ginger (3 cm)
  • Pepper (from the grinder)
  • 0.5 bunch mint

    Wash asparagus, peel thoroughly, trim woody ends and cook in plenty of salted water with sugar for 10-12 minutes until al dente. Peel orange thickly to remove white pith. Cut fruit flesh between membranes, catch juice and squeeze remaining pulp. Clean strawberries, wash and cut into small pieces. Slice asparagus diagonally into about 3 cm long pieces. Combine asparagus, strawberries and orange slices in a bowl.

    Whisk orange juice with honey and a pinch of pepper; peel ginger and press through a garlic press to add, taste. Mix sauce with salad ingredients and marinate for about 1 hour. Before serving fold in finely chopped mint and fill glasses with the asparagus salad with honey vinaigrette.
