Beerencocktail with Vanilla Ice Cream

Ingredients

  • 400 g frozen berries
  • 30 g shelled pistachio nuts
  • 150 g cream yogurt
  • 1 tbsp sugar
  • 1 tbsp Lemon Juice
  • 250 g whipping cream
  • 200 g vanilla ice cream

Instructions

    Thaw the berries in a sieve and let them drain well. Finely grind 20 g of pistachios, then mix with the berries, yogurt, sugar, and lemon juice. Roughly chop the remaining pistachios.

    Whip the cream until stiff and fold it into the berry mixture. Spoon half of the cream into four serving glasses, placing one scoop of ice cream on top of each. Cover with the remaining cream, sprinkle the chopped pistachios over the top, garnish with currants if desired, and serve immediately.
