Ingredients
- 400 g beef fillet
- 1 tsp Cornstarch
- 1 tsp soy sauce
- 1 tsp sherry
- 0.25 tsp chili powder
- 400 g asparagus
- 2 tbsp oil
- 2 tbsp Soy sauce
- 2 tbsp sherry
- 3 tbsp chicken broth
- 1 tsp Cornstarch
- Pepper
- 0.5 tsp Sugar

Slice the meat across the grain into thin strips. Dust the strips with starch, then toss in a bowl with soy sauce and sherry, add chili, and let marinate in the refrigerator for 30 minutes.

Wash the asparagus, peel the lower ends, trim off the tips, and cut into small pieces. Boil in salted water for about 10–12 minutes until al dente, then drain and set aside.

Heat a large wok, add oil, and quickly sear the meat on all sides.

Whisk the remaining ingredients together in a bowl, pour over the meat, bring to a boil once, add asparagus, and stir vigorously over high heat. Plate and serve garnished with finely sliced vegetables such as carrot or celery if desired.
