Beef Vegetable Curry

Ingredients
- 1 kg beef stew meat
- 2 onions
- 2 Garlic cloves
- 2 tbsp Ghee
- 2 tbsp curry paste
- 750 ml meat broth
- 4 tomatoes
- 1 tbsp Lemon Juice
- Salt
- black pepper (freshly ground)
- 150 g spinach

Rinse the meat, pat dry and cut into cubes if desired. Peel the onions and garlic; finely dice the garlic and roughly chop the onions. Sauté together in a Dutch oven with hot ghee until translucent. Add the beef and brown briefly. Stir in the curry paste and deglaze with a splash of broth. Wash the tomatoes, remove stems, and cut into pieces. Add to the pot along with lemon juice, salt, and pepper; cover and simmer for about 1.5 hours, stirring occasionally and adding more broth as needed.

Wash, trim, and roughly chop the spinach. Fold it into the curry during the last 15 minutes of cooking. Taste before serving and plate onto dishes.
