Ingredients

  • 600 g beef (rump steak, hip or fillet)
  • 2 tbsp Soy sauce
  • 1 egg
  • 10 ml sherry
  • 1 tsp Cornstarch
  • 300 g fresh shiitake mushrooms
  • 200 g Green beans
  • 1 bunch scallions
  • 3 red bell peppers
  • 3 tbsp clarified butter
  • 250 ml Beef broth
  • 100 ml dry red wine
  • Salt
  • ground pepper

Instructions

    Rinse the beef under cold water, pat dry, remove any sinews and slice into thin strips. Whisk together soy sauce, egg, sherry and cornstarch, then marinate the meat in this mixture for at least 30 minutes covered in the refrigerator. Preheat the oven to 80 °C (160 °F) with both top and bottom heat. Clean the mushrooms and cut them into strips; wash and trim the green beans, cutting diagonally if desired.

    Wash the scallions, shake dry, trim and slice into fine rings. Wash the bell peppers, halve, deseed, remove white membranes and slice the flesh into thin strips. Heat clarified butter in a large pan, pat the beef dry and sear in batches over high heat until browned. Remove the meat from the pan, wrap it in foil and place in the preheated oven to finish cooking.

    Sauté the vegetables in the remaining fat, pour in broth and wine, then simmer for 5–7 minutes over medium heat. Season with salt and pepper. Take the beef out of the oven, mix the resulting sauce into the vegetables, plate in deep bowls and serve hot. Oven potatoes or fresh baguette pair well with this dish.
