Beef Strips with Bell Pepper and Green Beans

Ingredients
- 600 g beef fillet
- 300 g red bell peppers
- 300 g green beans
- Salt
- 1.5 cm fresh ginger
- 3 spring onions
- 5 Tbsp plant oil
- 100 ml beef broth
- 2 tsp grated lime zest
- 2 tbsp dark soy sauce
- pepper (ground)

Wash the beef fillet, pat dry, trim and cut into strips. Wash the bell peppers, clean, halve, deseed, remove white membranes and dice. Wash the green beans, snap off ends and cut into ~4 cm pieces. Blanch in boiling salted water for 2 minutes. Drain, rinse with cold water and let drain well. Peel the ginger and dice finely. Wash the spring onions, trim and slice diagonally into rings.

Heat oil in a deep pan, sear the beef in batches until browned, remove and set aside. Add bell peppers, green beans and ginger to the pan and simmer for about 5 minutes while stirring constantly. Pour in broth, sprinkle lime zest, bring to a boil. Season with soy sauce, salt and pepper. Return beef and spring onions, stir briefly and serve.
